3 medium ears fresh corn, cut into 3 pieces
1 lb. medium red potatoes, quartered
1 cup fresh baby carrots
1 large green pepper; chopped in 1" pieces
1 large red pepper; chopped in 1" pieces
1 envelope onion soup mix
3 T minced fresh basil or 1 T dried basil
1T olive oil
1/4 t. pepper
1 T butter
In a large bowl, combining the first nine ingredients. Toss to coat. Place on a double thickness of heavy duty foil. Dot with butter. Fold foil around the veggie mix and seal tightly. Grill covered over medium heat for 25-30 minutes or until potatoes are tender, turning once.
